Look for the first floor of Ole in Sanlitun South to fully transform into a Spanish wine bar over the next month even as it remains open and shows Euro 2012 games each night. That’s a lot of beer, but you can expect wine to take over in a few weeks, says Yolanda Garval. Ole will have a particular focus on wines from Parxet, including a cava imported by Beijing-based DS Wines, she says, although the menu will include plenty of other Spanish options. Delivery of the wine is due this month and I’ll update when everything is ready.
