A few days ago, The Village Grouch forwarded me a New York Times article titled, “100 Things Restaurant Staffers Should Never Do“. (It lists the first 50 items, with the second 50 to come next week). Since that time, TVG has been messaging me about which of these things are being done at various local eateries, and two top the list:

  • 35. Do not eat or drink in plain view of guests.
  • 47. Do not gossip about co-workers or guests within earshot of guests.

Sounds about right. And in the spirit of the list, here are a few things off the top of my head I would add based on my Beijing experience (feel free to add your own):

- Do not clip fingernails within sight of patrons

- Do not hawk up loogies within earshot of patrons

- Bring utensils (applies only to Union Bar & Grille)

- Do not use your hands to put ice into glasses

- Do not pass full glasses of liquid over open laptops

- Don’t yell across the room at other staff members

- If a song is stuck on replay, i.e. it has played nine times straight, change it.

    giving u some new from a different perspective:

    - Do not pass full glasses of hot liquid over baby carriers with babies in them

    - Do not put all the plates as close to the baby chair as you can

    #51: Wait until all the tables orders are ready before bringing them out, so one person doesnt wait for 15 mins while everyone else has to start eating (or let their food go cold)

    #52: If you are a Chinese server serving Chinese guests do not use English, even if you work in a western restaurant

    i have the suggestion- stop make the problem with eat, go to mcdonald for burger and chip, leave tasty food item to local expert. that why you laowai all fat an a complain.

    hot food should be hot , cold food should be cold not everything one temperature..nuff said……..

    #54. If you are a delivery person, don’t drop a pizza on the ground outside and subsequently bring it to the customer, claiming that there is nothing wrong with it while all evidence points to the contrary.

    One from lunch today, to be filed in the “hospitality in the time of H1N1″ file: Don’t take the staff’s temperatures in full view of the guests.

    omg THANK YOU for taking a stand against public nail clipping. This should go for EVERYONE, not just fuwuyuan. It’s unsanitary and the noise makes me seize up in horror. Limit nail clipping to the privacy of your bathroom in your home!

    * If you’re Chinese, don’t comment to your colleague how much of a c*nt a particular western customer is on the assumption that he doesn’t speak your language.

    * I’ve finished eating. My partner hasn’t. Still, please wait until he/she has before trying to remove used plates from the table.

    * Leave the bill at the table. Walk away and wait to be called back by the customer. Don’t stand there waiting until a wallet is produced.
